Blueberry Baked Oatmeal
Ingredients
  • 2 cup MOMs Natural Foods GF Muesli
  • 1 cup  plant based milk for creamier results
  • 1 cup blueberries fresh or frozen (not thawed)
  • 1 banana overripe
  • 1 Tbsp sugar  coconut sugar
  • 1 tsp Lemon juice
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon powder
  • 1/4 tsp salt
  • 1/4 tsp ground ginger powder
Instructions
  1. Combine the Muesli and milk in a large bowl and set aside to soak for 1-2 minutes while you gather the remainder of the ingredients.
  2. Add all the spices, baking powder, and Coconut sugar, and mix well
  3. In a separate bowl, mash the banana with a fork. The smoother it is, the more evenly distributed it will be in the baked oatmeal.
  4. Combine the banana and oat mixture and stir well.
  5. Fold in the blueberries. Do this carefully if you’re using fresh blueberries
  6. Pour the mixture into an 8×8-inch (20×20 cm) parchment-lined baking tin and flatten gently.
  7. Bake in the oven at 350ºF/180ºC for 15 minutes. Optionally, turn on the grill/broil for the last couple of minutes to obtain a nice golden crust.
