Italian Artichoke Salad
Ingredients
  • 1Tbsp extra virgin olive oil
  • ½lemon, juice
  • 1large garlic clove grated
  • ⅓tsp fine salt
  • 170 gramsjarred grilled artichokes in oil, cut into wedges
  • 1 can (400 grams) northern beans, drained
  • 90 gramssalad leaves
  • 35g Sun Tasty Parmesan Puffed cheese ( Crushed)
  • black pepper, totaste
  Instructions
  1. place olive oil, lemon juice, salt, garlic and a pinch of pepper in a jar. whisk well to emulsify.Place artichoke wedges and beans into a bowl, add
  2. half of the lemon garlic dressing and stir well to combine.
  3. Arrange the salad leaves on a large serving plate and top with the artichokes and the beans.
  4. when time to serve it, trickle over with the remaining lemon garlic dressing and finish with Parmesan , and freshly ground black pepper.
